8 small/medium sweet potatoes, peeled, cooked & mashed Preheat oven to 350° F.
(I used 4 really large sweet potatoes)
1/3 cup sugar
2 eggs, beaten
1 teaspoon vanilla
1/3 cup butter, softened or melted
pinch of salt
1 cup brown sugar
1/3 cup flour
1/3 cup cold butter
1 cup chopped walnuts
Combine & beat together sweet potatoes, sugar, eggs, vanilla, butter and salt. Pour into greased 1 1/2 or 2 quart casserole dish.
Make the topping. Combine brown sugar and flour. Cut in cold butter. Stir in nuts. Spoon onto sweet potato mixture.
Bake at 350°F for 1 hour or until top is bubbly.
