Ingredients

Muffins:

 

2 Cups butter, softened

2 Cups Sour Cream

8 eggs

2 Tbs. Lemon juice

Rind of 5 lemons

4 Cups sugar

6 cups flour

3/4 tsp baking soda

3/4 tsp salt

 

 

Streusel:

 

1 1/4 cup sugar

1 1/4 cup flour

1/2-cup butter (use cold butter) 

 

 

Glaze:

 

1/2-cup sugar

1/3-cup lemon juice

 

Directions

Muffins:

Whisk eggs. Add sour cream butter, juice, and whisk until smooth. Fold in lemon rind and dry ingredients. Spoon into lined muffin tins.

 

Streusel:

Combine streusel ingredients and sprinkle over muffin batter. Bake muffins at 350 for 18-20 minutes.

 

Glaze:

Poke holes in top of baked muffins and spoon glaze into holes. Yields between 30-36 muffins.
