Lee Ann Miller - Mac and Cheese Bake from
1 pound large size macaroni, uncooked Preheat oven to 350 degrees. Grease 2-1/2 quart casserole dish.
1 tablespoon olive oil
1/4 cup butter
1/4 cup flour
2-1/4 cups milk (I use 2-1/2 cups for a creamer recipe)
1/4 onion, chopped fine
1/2 teaspoon salt
1/2 teaspoon dry mustard
3 cups Velveeta cheese
3/4 cup shredded cheddar cheese
dash of cayenne
1 sleeve of Ritz crackers, crushed
Cook macaroni according to package directions; drain.
Place cooked, drained macaroni in a large mixing bowl. Toss with olive oil.
Melt butter in a saucepan over medium heat. Add flour; cook, stirring until bubbly and thick. Add milk, onion salt and dry mustard. Stir until slightly thickened.
Add cheese; stir until cheese is melted. Pour over macaroni and fold cheese mixture and macaroni together. Add fresh parsley if desired.
Bake 20 to 25 minutes.
