½ cup butter

1 cup brown sugar

2 eggs

3 bananas

2 cups flour

½ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup chopped pecans

1 cup drained crushed pineapple

8 oz. softened cream cheese


Cream butter and sugar; add eggs, one at a time. Mash the bananas; add and mix well. Stir in sifted dry ingredients gradually. When well mixed, add nuts. Pour into a well-greased loaf pan. Bake at 350 degrees for 50-60 minutes. I use a glass loaf pan and bake about 57 minutes. For spread, mix pineapple and cream cheese well; spread on each slice to serve.
